Plantain Chips

Serves 6 (Serving size: ½ plantain with 2 tablespoons salsa)

Plantain chips are fabulous—they taste both sweet and savory at the same time. When choosing a plantain for this recipe, find one that has turned mostly yellow, with a few spots of black on it, for the sweetest taste.

3 tablespoons corn oil

3 plantains, ripe and yellow

1 tablespoon granulated sugar

½ teaspoon salt

¾ cup gluten-free tomato salsa

1. Heat the corn oil.

2. Peel and slice the plantains into ¼-inch rounds.

3. Fry the plantains on one side, flatten them with a fork, turn them over, and brown them on the other side.

4. When the plantains are cooked through, crispy, and golden, remove them from the heat.

5. Sprinkle the plantains with the sugar and salt, and serve with your favorite gluten-free tomato salsa.
